"He made me choose" .. that is a quit.
So, I assume your question has more to do with the fact that he took your keys when you said you would not be in on Friday.
Did the employer expressly deny you the time off because you were going to be attending a "convention"?
I might be dense, but how do you plan on using a "religious conviction" as good cause for quitting a job which since you did request time off .. supports the fact that you regularly worked on Fridays?
If I were you, I'd stick to the request for time off. Did you follow the employers rules for notification of the need for time off? Was the employer's denial unreasonable? Were you being treated unfairly as compared to how other employees were allowed to use their PTO.
