Don't waste It .. Leftovertata It.

I've always been frugal .. it's just my mindset and most likely because I was raised by parents that grew up during a time much like we're experiencing now.
I do know, it drives me crazy if something start to grow green fuzz in my refrigerator .. so I make it a practice to reinvent what is left over in my fridge, but especially, right before shopping day and I always shop while thinking about the use after the day I cook it.
Shopping day is almost always without fail very early Sunday morning .. so I can avoid the after church buggy rush hour.
But there is one item that if all gone .. will send me on an emergency visit to the grocery store and that would be one of my favorite forms of protein .. eggs.
Thank goodness I had two eggs left when I realized I was so hungry I felt like I might faint, while trying to catch up with some C2 (the function of this website I'm now using) questions that were waiting to be reviewed.
I decided brunch was going to be the remainder of left overs in the fridge held together with two eggs which isn't really enough for the typical frittata, but it does the trick to hold them all together.
This is what I found to eat on Saturday .. the day before my big shopping trip.
2 eggs, which I whisked with a little half and half I thought might be getting close.
2 small leftover baked potatoes from last night, that I sliced up home fries style.
2 Tablespoons finely diced onion
1 leftover slice of meatloaf diced into bites sized pieces
(I think of meatloaf in terms of specific flavor profiles you might add to ground meat mixtures .. except I add eggs, some kind of crumb to a meatloaf ..
This meatloaf was modeled after one of my favorites, chicken fried steak, which to me means thyme, little bit of sage, pepper and other herbs to season the ground beef/pork mixture.)
2 ounces of cheddar cheese which I shredded
slices of toast ( I used some rye I feared could turn moldy at any moment :)
And of course salt and pepper to taste .. if you need it. I personally think leftovers have plenty .. and I take BP medicine ..
I crisped up the potatoes slightly with the onions in a 10 inch skillet, I then added the meat loaf to heat it up. All this was done over the lower side of medium high heat.
I then poured the eggs over the top .. shook the pan to spread them out and covered and then reduced the heat to low and let it go until the eggs were almost set.
I then spread the cheese over the top recovered and turned the heat off and waited for it to melt.
I toasted enough bread to make 3 breakfast sandwiches for 3 adults.
It was just as good as any real frittata I've ever concocted and I didn't have to turn the oven on. I just wished I thought to add a few diced tomatoes .. and maybe a bit of shredded parmigiano .. the tang would have been nice.
Of course, I now have left over leftovertata .. so maybe tomorrow morning.
A word of caution .. don't answer questions about unemployment while you're crisping up the potatoes .. you might burn and waste them:)
